First thing you need to know is that there are 3 different harvest ages….depending on what you’re looking for.
The green coconut or “young coconut” is used predominantly for drinking. The texture is too sticky, to eat. Its coconut water is often mixed with rum or vodka.
The brown “old or mature” coconut is the most edible. The meat is usually grated to extract coconut milk used in several island recipes – like the "poisson cru" (Polynesian raw fish dish – featured in last week’s post), or sprinkled on fruits like banana and pineapple.
The third and eldest, is the sprouted coconut. Its flesh is fermented and should not be eaten; however, you CAN eat the heart. The heart is like a sponge which melts in your mouth and releases the full flavor of the coconut. Very tasty! Check it out for yourself below!
